In a food processor, blend dates, 1/2 cup of the cherries and the almond extract to a smooth paste.
Add the
almond butter and cashew butter and process until well-blended, adding water as needed to keep mixture moving and not sticking.
Add the remaining cherries and the walnuts and pulse, leaving some larger pieces for texture.
Scoop into balls and chill for at least 1/2 hour to firm up. Roll into balls and if desired, roll in
cocoa powder,
cinnamon or hemp seeds.
Makes about 40 balls.
