Oatmeal with Apple Pie Topping

This is like eating apple pie for breakfast. But good for you and guilt-free!

Ingredients
For the Apple Topping:
1 apple, peeled, cored and diced
1/2 teaspoon ground cinnamon
1/4 teaspoon pure vanilla bean powder or alcohol-free vanilla extract
For the Oatmeal:
2 medjool or 4 regular dates, pitted
1 1/4 cups unsweetened soy, hemp or almond milk
1/2 cup old fashioned rolled oats
1/2 cup steel cut oats
1/2 tablespoon ground cinnamon
1/4 teaspoon pure vanilla bean powder or alcohol-free vanilla extract
Instructions
To make the apple topping, toss apple with cinnamon and vanilla. Heat about 2 tablespoons of water in a saute pan and cook apples until tender, adding additional water as needed to prevent sticking.

To make oatmeal, blend dates and non-dairy milk. Place in a pot along with oats, cinnamon and vanilla and cook for 15 minutes.

Serve topped with apple mixture.
