While most compotes are made from cooked fruit, this one is raw. The chia seeds and dates give it an amazing, thick consistency. It is also one of the most versatile recipes! Use it as you would jelly on toast, oatmeal and pancakes, or for a fruity topping for any dessert. It’s also very tasty plain. Not too sweet or too tart!

Recipe
Serves
Ingredients
2 cups frozen mixed berries, thawed or partially thawed
1 tablespoon chia seeds
4 Medjool or 8 regular dates, pitted
Instructions
Combine all ingredients in a food processor until berries and dates are chopped to a fairly smooth consistency. Pour into a glass container and chill for four hours or overnight until thickened.

Makes 2 cups.

Note: You can add fresh cranberries to make an healthful cranberry sauce for holiday meals.
