This creamy chowder starts with sweet corn and quick-cooking red lentils. Fresh ginger, curry and a dash of turmeric dial up the flavor.

1 large onion, chopped
1 tablespoon curry powder
1/2 teaspoon turmeric
4 cups no-salt-added or low sodium vegetable broth
2 cups water
1 1/2 cups dry red lentils, rinsed and drained
1 tablespoon peeled and grated ginger
1/4 teaspoon black pepper
3 cups fresh or frozen corn kernels, divided
2 cups finely chopped kale


Heat 2-3 tablespoons water in a soup pot and water saute onion until tender. Add curry powder and turmeric and cook for 1 minute. Add broth, water, lentils, ginger and black pepper, bring to a boil, reduce heat, cover and simmer for 15 minutes or until lentils are tender.

Add 2 cups of the corn and cook for an additional 10 minutes, stirring occasionally. Place soup in a high-powered blender and blend until smooth and creamy. Return to soup pot, add remaining 1 cup of corn and chopped kale and cook until kale has softened.

     For many years; I have tried different diets, but I didn't know how to plan a nutritional diet  My life totally changed after I found Dr. Fuhrman at You Tube. With Dr. Fhurman, I found a whole spectrum of a well balance and nutritional food. I am now in a Whole Plant Base Diet. Then I found out that, he had written books for different illness. I bought his 20 days menu book for Diabetes. So, I could help my brother who lives in Mexico who had been suffering with high glucose. I translated the recipes for my brother. But it was too late. I think he had diabetes 4. Three days later, he got into the hospital and his two toes were amputed. Then five days later another toe. Finally, a week later three quaters of his leg was amputeted.  I was shocked by how fast gangrena was spreading. Then, his foot got contaminated too, from a bad Bacteria.  Now, he is recuperating from surgery. And I told him that he has to follow Dr. Fhurman's  20 Days Menu Diet.  I am not sure if he has to follow another diet.  Although it was too late for my brother. I sillt want to thank Dr. Fhurman for giving us his knowledge and years of research work. Most important, for teaching us; that the way of a healthy life; was to stay away from toxic foods. In my opinion, all our food has been contaminated in different ways; and now, we must try to eat a Nutritarian Diet as much as possible. I am very happy to promote Dr. Fuhrman's  "Whole Plant Base Diet" to my friends and family. And to whom ever I come across with.    Baudelia Mendoza

Patient: The Normal Food;    55% process food, 30% meat, 11% vegetables, 4% granes.

Dr. Fuhrman, what?  The Normal food?  Hahahaha

Baudelia, I am so moved to hear about your brother and so sorry about his amputations. Thank you so much for sharing and caring enough to spread the word about healthy nutrition. I lost my first husband to colon cancer. It was during his illness that I began my journey learning about this way of healing the body through nutrition. My husband was already stage 4 when he was diagnosed, but I believe that the diet he followed afterwards extended his life for at least a year (he lived 2 1/2 years after diagnosis). And his quality of life was excellent, compared to those who suffer through chemo and radiation. (He did have some of those treatments to shrink the tumor for surgery). Now I try to follow this healthy way of eating and share it with the rest of my family and friends. I , too, am grateful to Dr. Fuhrman, Dr. Barnard, Rev. Malkmus and others who have dedicated their lives to helping others live longer, healthier lives.

This recipe should be tagged as "Quick and Easy," because it is.  I like the fact that it calls for finely chopped kale as I always "sneak in" finely chopped greens in soups and stews if they don't call for them.  You can't even taste it.  I garnished the top with finely chopped raw red onion.

I made this a bit spicier with twice the amount of curry powder but it was delicious. I put in a bit of carrot juice as well.

This is the first soup I have made using this site. It is delicious!  It was also my introduction to curry powder and its unique flavor. A keeper!

I made this in the instant pot with about 2 cups less water and added extra kale.  The flavor was delicate and tasty.  I think next time I will use less corn and a bit more lentil.   It was a very good and fast dish that my whole family enjoyed.
