This creamy nut- and seed-based mayo tastes better than the real thing. Try it on bean burgers, veggie wraps or as a salad dressing or dip.

Ingredients

1 3/4 cups raw cashews, soaked in water for 2 hours, then drained
1/4 cup hemp seeds
3 medjool or 6 regular dates, pitted
4 cloves garlic
4 tablespoons apple cider vinegar
1 lemon, juiced

Instructions:

Place all ingredients in a high-powered blender and process until creamy. Store in a covered container in the refrigerator for up to one week.

Note: To make sour cream, double the apple cider vinegar.

For cajun mayo, add 1 tablespoon curry powder, 1 teaspoon chili powder, and 1/2 teaspoon chipotle powder or cayenne.

I'm assuming you soak the cashews in water? If so do you add the water when you blend together?

you would drain the water after you soaked the nuts in it

Great recipe find!  I started with a half recipe.  I did soak the cashews in water for easier blending.  I found 2 medjool dates were sufficient.  The "mayo" was very creamy.  To improve the taste and healthiness, I added more garlic as well as onion powder, dry mustard powder, a 1/4 tsp cumin and 1/4 tsp coriander.

This recipe is good to keep in the refrigerator, in case your veggie burgers are a little dry.  Problem solved! Taste is enhanced.

In my second experiment, I added 1 tablespoon Sesame seeds and 1 tablespoon ground flax seed, in addition to the previously mentioned spices.  

I tested with an onion sandwich (sliced onions and lettuce on whole grain bread.  The results were delicious.  Great recipe!

If too thick, try thinning with hemp milk, almond hemp milk or water; a small amount will work.

I have stored it well over a month, However, I always turn the jar upside down to prevent oxidation, and store it at 34 degrees Fahrenheit.

The recipe states that it serves 10.  I get about 16-18 ounces.  That would make about 2 tablespoons per serving.  However, it really depends on how you are using the condiment.

Gosh this was surprisingly delicious and really had a mayo taste! Way better than real mayo and vegan mayo. We made a half batch, and it was a lot. I wonder if this would hold up in the freezer?
