Take a break from oats and try quinoa for breakfast. This hearty whole grain is perfect in a breakfast bowl that includes berries, apples, almonds, flax seeds and a dash of cinnamon.

Ingredients:

1 cup dry quinoa
2 cups water
1/2 cup unsweetened soy, hemp or almond milk
1 cup fresh or thawed frozen blueberries
1 medium apple, cored and diced
1/2 cup raw almonds, chopped
1/2 cup raisins or chopped, pitted dates
1 tablespoon ground flax seeds
1 teaspoon cinnamon

Instructions:

Place quinoa and water in a saucepan, bring to a boil, cover, reduce heat, and simmer for 15 minutes or until quinoa is tender and all the water is absorbed. Fluff with a fork.

Add remaining ingredients and cook for another 2-3 minutes, stirring frequently. Divide among four bowls.

It was indeed a break from oatmeal which I have 4-5 times a week.  The texture was a refreshing change and I like that quinoa is a complete protein.

I used Pecans instead of Almonds because they're easier to chop and it tasted fabulous!  I'm saving the other three portions for breakfast during the week.

I replaced the almonds with ground flaxseed and added more almond milk. Delicious!
