Nectarine and Plum Crumble

This baked crumble is a wonderful way to showcase fresh stone fruits. And it's a healthful way to end your meal on a sweet note!

Ingredients
1/4 cup unsweetened soy, hemp or almond milk
1/4 cup water
1 teaspoon cinnamon
3/4 teaspoon alcohol-free vanilla extract or vanilla bean powder
4 ripe plums, halved, pitted, cut into wedges
3 ripe nectarines or peaches, halved, pitted, cut into wedges
1/4 cup raisins, chopped
1/3 cup old fashioned rolled oats
1/4 cup ground raw almonds
Instructions
Preheat oven to 350 degrees F.

In a bowl, mix the non-dairy milk, water, cinnamon and vanilla until combined. Stir in plums, nectarines, raisins, oats and ground almonds.

Pour into a baking dish. Bake, uncovered, for 30 minutes.
Serve warm.

If desired, serve with a dollop of Cashew Cream.
To make Cashew Cream, blend 1 1/3 cups raw cashews, 3/4 cup vanilla unsweetened non-dairy milk and 2/3 cup pitted dates in a high-powered blender until smooth and creamy.
