Keep it simple. Make this easy sautéed kale your go-to recipe when you need a quick plate of greens.

1 small onion, thinly sliced
1 clove garlic, chopped
1 cup sliced mushrooms
1/4 teaspoon crushed red pepper flakes
1 bunch kale, leaves removed from tough stems and chopped
2 carrots, shredded or sliced thin with a vegetable peeler
1 tablespoon toasted unhulled sesame seeds


In a large pan, water sauté onion, garlic, mushrooms and red pepper flakes until mushrooms start to lose their moisture. Add half of the kale, stir for 1 minute then add the remaining kale and cook until softened. Use a small amount of water as needed to prevent sticking. Add shredded carrots and continue cooking 2-4 minutes until kale is tender.

Toss with sesame seeds.

Delicious and easy to make. Used the Vidalia Chop Wizard to dice the onion (red onion), and tomatoes (home grown Jet Star). Topped it off with Doc Fuhrman's Nutritional Yeast (bien sur). A keeper!

This is a great recipe, but add extra garlic that has been earlier been crushed, at the last minute. Read up on garlic. It's robustly healthy when served but not heated to simmering temperature but briefly.
