This superfood sorbet teams up the powers of blueberries and walnuts. . Blueberries are rich in antioxidants that help prevent cell damage and memory loss and walnuts provide heart-healthy omega-3 fats .

Ingredients:

1 1/4 cups unsweetened soy, hemp or almond milk (Use 1 cup for thicker sorbet & use 1 1/2 cups for thinner sorbet)
3 cups frozen blueberries, divided
2 frozen bananas, one chopped into bite size pieces (see note)
3/4 cup chopped walnuts, divided
1 tablespoon ground flax seeds

Instructions:

Blend non-dairy milk, 2 cups of the frozen blueberries, 1 frozen banana (unchopped) and 1/2 cup of the walnuts in high powered blender. Empty into a chilled bowl and mix in remaining blueberries, chopped banana and walnuts. Served topped with ground flax seeds.

Note: Freeze ripe bananas at least 8 hours in advance. Peel bananas and seal in a plastic bag before freezing.

Absolutely delicious! :) Elijah demonstrated this for us at an ETL gathering, and now we make it all the time. We don't add in the second chopped frozen banana, but the added blueberries and walnuts are a great touch.

Delicious. I add a T. unsweetened cocoa powder, and little vanilla extract and cinnamon.
