Deliciously crunchy and sweet, this simple kid-friendly salad is great to pack for on-the-go lunches. It will keep well in the refrigerator for several days.

8 medium carrots, peeled and shredded
1/2 cup raisins
1/4 cup freshly-squeezed orange juice
1/4 teaspoon cinnamon, or to taste


Combine carrots and raisins. Add orange juice and cinnamon and toss.

I can't believe no one reviewed or rated this yet. Super easy (if you use a processor to shred the carrots) and lasts well in the fridge. All of my kids ate it -- whis is saying something! It is also good served over spinach. This is sweet, but not overly so and goes with just about everything.
