Blueberry Pomegranate Dressing

Ingredients

2 cups fresh or thawed frozen blueberries
1/2 cup pomegranate juice
1/4 cup raw cashews
1/4 cup hemp seeds
1/4 cup Dr. Fuhrman's Wild Blueberry Vinegar or other fruit flavored vinegar

Instructions:

Blend ingredients in a high-powered blender until smooth and creamy.

Made this with Dr. F's Pomegranate vinegar and it had a strong pom taste! Very nice change from the Blueberry Dressing recipe!

This makes an awful lot of dressing. How do you store the leftovers? I tried putting it in the fridge however it became very thick and not at all like dressing. Any tips?

Add a bit or pomegranate juice or fruit flavored vinegar, if stirring by itself leaves the dressing too thick.

I love this dressing. I use raspberry vinegar and have a few more cashews than pumpkin seeds. I do agree with Corina that it is quite thick when stored in the fridge but all I do is give it a stir then spoon it onto my salad and mix it in. Just delicious!

I agree - you just need to thoroughly stir it after storage in the frig and it returns to it's normal consistency.

I love this dressing! It's a staple. I have also substituted black raspberries and Marionberries...all make a great dressing. Just process a little longer in a VitaMix until all traces of blackberry seeds are decimated.

I freeze extra. I keep my refrigerated dressing in a "shaker" so it gets to the right consistency before pouring. Or I stir and spoon it out of a container.

Mine got a little gelatinous. Is that what others mean by thick? Some of the other balsamic dressings have a little mustard in them which perhaps help emulsify the dressing somewhat.

Store extra in the freezer in a PBA free ice cube tray. Then take out what you need, thaw in a bowl set over another bowl of hot water. Whisk when thawed to remove any lumps.

The greatest dressing.  I used pine nuts and chia seeds because those are ones that I can tolerate.  This is so good that you could eat it with a spoon.  I agree that adding mustard to it would add a nice tartness

I was really excited to try this recipe....but I thought it was terrible.  Maybe that is because I tried it in week 1 of my ETL journey...but I couldn't eat my salad because it was so gross. Maybe my tastes will change after eating more ETL foods and I will like it. But as of now, I couldn't even choke it down. Definitely not a beginner dressing if you are used to SAD foods.
