4 large (100% whole grain) flour tortillas or pitas
2 cups pasta sauce, no salt added or low sodium
1/2 cup chopped shiitake mushrooms
1/2 cup chopped red onion
10 ounces frozen broccoli florets, thawed and finely chopped
1/4 cup shredded nondairy mozzarella-type cheese *


Preheat the oven to 200 degrees. Place tortillas or pitas on two baking sheets and warm for 10 minutes. Remove from oven and spoon on the pasta sauce. Sprinkle evenly with the mushrooms, onion and broccoli. Add a light sprinkle of cheese. Bake for 30 minutes.

* Daiya brand is a good choice

Love this dish. We mix it up with other topings, too. Also, we cut the pita's in half for a bit of thin crust flair...

I think this is one of my favorites so far. I'm not a big fan of broccoli unless its by itself so I used loads of onions along with mushrooms, red peppers, artichoke, roasted garlic, and spinach. We just sort of dressed up our own depending on what everyone liked best. The best part is plenty of pasta sauce, absolutely spectacular (competes with my pre-ETL pizzas easily). The second time I made these I tried to cook at higher temps for shorter periods of time and it didn't come out nearly as good. The pita was much crispier at the lower longer temps. I also could do this with or without the cheese. My husband needed the cheese to make it authentic :P . I actually sprinkled mine on fresh after it was done baking because I think it tastes better this way vs. melted. Oh and I love using herbs and spices so I sprinkled on some basil, oregano, thyme, tarragon and black pepper. Then on only mine I put some crushed red pepper for the zing I loved on my old pizzas.

I really like this one b/c I can eat it while others eat SAD pizza! I've never been a big fan of soy cheese so I sprinkle nutritional yeast on top. I add whatever veggies I have on hand on top. Usually mushrooms, diced onion, and sometimes tomatos and pineapple. yum. This always feels like a treat :)

We love this! We use Daiya cheese too, it's fantastic. I cook them for 30 mins as it says, but the toppings aren't hot enough so i then broil for a few minutes.

I also used Brown Rice Tortillas Only toasted for a few minutes and cooked for less time and it came out excellent. I can't imagine it with pitas.

I made this recipe with my mom this weekend who has gotten into ETL just a few months ago and is loving it. We used 1/2 cup of mozzarella cheese, but mixed it in with the veggie toppings, which we used much more veggies than called for. So, our pizzas were piled high with broccoli and had a small amount of cheese mixed in with the veggies. Compared to the picture above, our pizzas looked to have a lot less cheese overall. After the pizzas were done baking, we loved the slight crunch that the broccoli florrets still had. We also added some red pepper flakes on top for some extra heat. YUM!

The temp of "200 degrees" must be a misprint. Nothing bakes at that temp.
It should be 325 at least.

I have been making htese for many years even when I was skinny. Instead of useing canned tomato that has slat and who knows what else I just sliced a tomatoe and it tastes great. I did use vegan cheese and some grated vegan also. With lots of basil and oregano, my son who hates everything loved it but he ate the real cheese.

Made this dish last night. I toasted the pitas for 10 min at 200, and realized that cant be right. So to be on the safe side i only turned it up to 275. Before i put the tomato sauce on, I put down a bed of spinich and topped with broc, onion and mushroom, and baked for 30 at 275. i couldnt find a non dairy cheese so we did without. and definite do-over, easy and fun to prep. the toppings could be endless.

This is a great idea. I used a low-cal, whole grain tortilla and couldn't believe how full I was for so few calories!

Love this! I eat it a few times a week. After its done baking, I add a bunch of arugula dressed with a little balsamic vinegar on top of the pizza. The flavors compliment the pizza and its another way to get those greens in!

I sauteed all the veggies with water, adding fennel seed (to simulate the sausage on a SAD pizza) and COPIOUS amounts of dried basil and even more oregano. Once it had all started to steam and dry and carmelize a bit, I put it in the vitamix to get everything in similar sizes, then put it over the tomato sauce. The next time I made it I made extra, froze it and found if you warm it up and put it on hummus, scooped up with raw cucumber and red pepper, it was an amazing crudite. This way I can have the recommmended daily amount of onions and mushrooms with all the prep done in advance. Hooray for Dr. Fuhrman's passion and creativity...

this saved me today - i really needed some pizza in my life! i didn't do the broccoli, but i did add fresh basil, spinach and yellow pepper. yuumm! i think i actually added too much veggie shred (cheese) so i'll use much less next time, and also roast some garlic and spread it on the pita/flatbread before the sauce. really quick prep, great meal! (only gave 4 stars since i changed the recipe a bit)

I made it with whole wheat pastry flour and it taste great. I added tomatoes and basil and mushrooms and it was very very good even kids loved it.

Love this pizza and make it all the time. I used broccoli, mushroom, and zucchini. The veggies were fresh so I water sautéed them for a few mins first. And no the 200 degree temp is right otherwise the pita turns into a rock!

My Favorite recipe so far! I could only find whole wheat thin bagels, 50 calories a half, so they worked fine! I baked mine at 400, so it was super crisp, just like thin crust pizza! My non ETL husband, asked for them again!!! Our grocery stores do not carry a dairy free cheese...? Glad the brand name is mentioned. I will ask them to start getting it!

I've made these several times for and with my grandson, and they are delicious. I cooked them at 400 degrees with my Fuhrman sweet potato fries. We used whole grain tortillas, because that's what was on hand. I let my grandson help me create the "shake bag" for the "fries" and pick the veggies he wanted to use for his veggie pizza, then let him use the chopper to cut them, which he loved. He spread the tomato so and added his toppings. It's a good way to help kids learn to cook and to eat well at the same time.

This was awesome. I added swiss chard and basil. I baked it for 15 minutes at 350F and then increased the temp to 425F for the last 5 minutes.
