Easy Vegetable Pizza
You don't have to give up pizza to be a Nutritarian. Add your own favorite toppings; the variations are endless.
4 large (100% whole grain) flour tortillas or pitas
2 cups pasta sauce, no salt added or low sodium
1/2 cup chopped shiitake mushrooms
1/2 cup chopped red onion
10 ounces frozen broccoli florets, thawed and finely chopped
1/4 cup shredded nondairy mozzarella-type cheese *
Preheat the oven to 200 degrees. Place tortillas or pitas on two baking sheets and warm for 10 minutes. Remove from oven and spoon on the pasta sauce. Sprinkle evenly with the mushrooms, onion and broccoli. Add a light sprinkle of cheese. Bake for 30 minutes.
* Daiya brand is a good choice
