Nectarine and Plum Crumble
This baked crumble is a wonderful way to showcase fresh seasonal fruits. It works as a tasty dessert or even a special breakfast treat!
1/4 cup soy, hemp or almond milk
1/4 cup water
1 teaspoon cinnamon
3/4 teaspoon alcohol-free vanilla flavor or 1/2 vanilla bean, split lengthwise
4 ripe plums, halved, pitted, cut into wedges
3 ripe nectarines, halved, pitted, cut into wedges
1/4 cup raisins, chopped
1/3 cup old fashioned rolled oats
1/4 cup ground raw almonds
Preheat oven to 350 degrees F.
In a bowl, mix the non-dairy milk, water, cinnamon and vanilla until combined. If using a vanilla bean, scrape the seeds from the pod with a dull knife and add to the mixture. Stir in plums, nectarines, raisins, oats and ground almonds.
Pour into an 8" by 8" baking dish. Bake, uncovered for 30 minutes.
If desired, serve with a dollop of Cashew Cream.
To make Cashew Cream, blend 1 1/3 cups raw cashews, 3/4 cup vanilla non-dairy milk and 2/3 cup dates together in a high-powered blender until smooth and creamy.
