This baked crumble is a wonderful way to showcase fresh stone fruits. It works as a tasty dessert or even a special breakfast treat!

1/4 cup soy, hemp or almond milk
1/4 cup water
1 teaspoon cinnamon
3/4 teaspoon vanilla extract or 1/2 vanilla bean, split lengthwise
4 ripe plums, halved, pitted, cut into wedges
3 ripe nectarines, halved, pitted, cut into wedges
1/4 cup raisins, chopped
1/3 cup old fashioned rolled oats
1/4 cup ground raw almonds


Preheat oven to 350 degrees F.

In a bowl, mix the non-dairy milk, water, cinnamon and vanilla until combined. If using a vanilla bean, scrape the seeds from the pod with a dull knife and add to the mixture. Stir in plums, nectarines, raisins, oats and ground almonds.

Pour into an 8" by 8" baking dish. Bake, uncovered for 30 minutes.
Serve warm.

If desired, serve with a dollop of Cashew Cream.
To make Cashew Cream, blend 1 1/3 cups raw cashews, 3/4 cup vanilla non-dairy milk and 2/3 cup dates together in a high-powered blender until smooth and creamy.

Liked it..but how can i make it abit sweeter...was kind of bitter for a dessert

Delicious! It was better the next morning reheated. I added some organic raspberries..even better.

So wonderful! I didn't have the cashew cream and used plums and pluots, it was a little tart but I love tart desserts... this will be a base recipe for lots of fruit in the future.

This dessert is delicious! It is versatile enough to use with lots of different fruit. The cashew cream tops it off nicely and adds that bit of sweet to counteract the tartness of the fruit.
