Turn up the flavor with this tasty gravy. Try it with Dr. Fuhrman’s Mushroom and White Bean Loaf or Cauliflower, Spinach Mashed “Potatoes.”

Ingredients:

1 medium onion, thinly sliced
6 cloves garlic, minced
3 tablespoons whole wheat flour
2 teaspoons arrowroot powder
2 tablespoons nutritional yeast
1 tablespoon ground dried mushrooms, any variety
2 teaspoons Bragg Liquid Aminos
1 tablespoon Dr. Fuhrman's VegiZest or other no salt seasoning, adjusted to taste
2 cups water
1/2 tablespoon balsamic vinegar
1/8 teaspoon dried sage
1/8 teaspoon black pepper

Instructions:

Heat 1/8 cup water in a medium saucepan, add onions and garlic, cover and cook over low heat until onions are soft. (see note)

Add the flour, arrowroot powder, nutritional yeast, dried mushrooms, Braggs and VegiZest. Gradually add the water, stirring constantly. While stirring, bring the gravy to a boil and allow it to thicken. Add vinegar, sage and black pepper.

This healthful gravy is wonderful paired with Dr. Fuhrman's Mushroom and White Bean Loaf or Cauliflower, Spinach Mashed "Potatoes".

Note: If you want a gravy with a smoother consistency, blend the cooked onion and garlic in a food processor or high powered blender with 1 cup of water. Reduce remaining water to 1 cup.

I have been very hungry for gravy but thought that for one to be good it would need an oil. I did two things differently. I pureed the onion and garlic after cooking them with 1 of the cups of water, flour, arrowroot powder and yeast. Also, more seasoning was added and red pepper was added as well.

This gravy is very good. I didn't like the onions in this, it felt too much like french onion soup. So... I vitamixed them. Perfect. Smooth like the gravy we are used too.

Dear sweet,
omit the wheat flour. Is arrowroot gluten free? I don't know, but use cashews instead to thicken it and they make a very creamy texture . Especially if whipped at high speed in a vitamix for a few minutes. I've also used hemp seeds or chia seeds to thicken sauces and soups. Instead of flour or other thickeners.I works really well and I don't have to use wheat flour for anything.
By the way, for really fantastic cauliflower mash, add a can of white beans to the mix, wow it's like the real thing and not watery.

Your comments are very helpful.  I don't want to buy a huge bag of whole wheat flour for three tablespoons, and the cashew substitution sounds better anyway.  Thank you.
