Better Brown Gravy
Turn up the flavor with this tasty gravy. Try it with Dr. Fuhrman’s Mushroom and White Bean Loaf or Cauliflower, Spinach Mashed “Potatoes.”
1 medium onion, thinly sliced
6 cloves garlic, minced
3 tablespoons whole wheat flour
2 teaspoons arrowroot powder
1 tablespoon ground dried mushrooms, any variety
2 teaspoons coconut aminos
2 cups water
1/2 tablespoon balsamic vinegar
1/8 teaspoon dried sage
1/8 teaspoon black pepper
Heat 1/8 cup water in a medium saucepan, add onions and garlic, cover and cook over low heat until onions are soft. (see note)
Add the flour, arrowroot powder, nutritional yeast, dried mushrooms, coconut aminos and VegiZest. Gradually add the water, stirring constantly. While stirring, bring the gravy to a boil and allow it to thicken. Add vinegar, sage and black pepper.
This healthful gravy is wonderful paired with Dr. Fuhrman's Mushroom and White Bean Loaf or Cauliflower, Spinach Mashed "Potatoes".
Note: If you want a gravy with a smoother consistency, blend the cooked onion and garlic in a food processor or high powered blender with 1 cup of water. Reduce remaining water to 1 cup.
