Apple Oatmeal Bars
1/2 cup chopped unsulfured dried apples
1/2 cup raisins
1/2 cup dates
1 1/2 cups vanilla soy, hemp or almond milk, divided
1 cup rolled oats
3 tablespoons ground flax seeds
Combine the apples, raisins, dates and 3/4 cup of the non-dairy milk and allow to sit until the dried fruit is softened, about 1 hour.
In a large bowl, mix oats and ground flax seeds with the remaining 3/4 cup non-dairy milk and allow to sit for 1 hour.
Using a blender or food processor, combine the dried fruit mixture and the nut butter and process until smooth and well blended.
Add the blended mixture to the oats and flax seeds and mix well. Transfer to an 8 X 8 inch baking pan and spread evenly. Bake in a 350 degree F oven for 45 minutes. Cut into squares.
