1 1/2 cups cooked garbanzo beans (chick peas) or canned, no salt added or low sodium, drained
3 plum tomatoes, chopped
1 boiled potato, peeled and chopped in chunks
1 green apple, peeled, cored and chopped
1 cucumber, chopped
1/2 small onion, chopped
1/4 cup chopped Brazil nuts, divided
3 tablespoons Dr. Fuhrman’s Spicy Pecan Vinegar or balsamic vinegar
1 tablespoon chopped cilantro
10 ounces mixed salad greens


Mix all ingredients, except salad greens and 2 tablespoons Brazil nuts. Serve on bed of mixed salad greens and sprinkle with remaining Brazil nuts.

Note: This is even better when refrigerated overnight to blend flavors.

I tried this recipe last week and my daughter and I both really enjoyed it. Let me just say the Spicy Pecan Vinegar was really worth the price. This was one of my first recipes actually my second. My first was the California Creamed Kale "THE BOMB" I'll rate that next, this would have gotten a 5 star had I not just had the creamed kale.

This was very good... the spicy pecan vinegar was delicious, and we liked the texture of the salad. The only thing was we made our portions so huge, I got a little sick of it by the end. Also, it only took 15 minutes to make with two people chopping, and we ate it for two days.

This is one of my tried and true all time favorites. I have roughly a double serving of this to make a meal of it for lunch. As others have said, the spicy pecan vinegar is a key ingredient. Don't even think about trying to substitute something else, because it wouldn't be the same.

I used pomegranate balsamic for this recipe and the salad turned out delicious. I added a few elements to make it more Greek.

We don't buy vinegars from Dr. F, so I use apple cider vinegar, and it's pretty delicious. I have served this to family and friends, and everyone loves it.
