Easy No-Bake Thumbprint Cookies

Kids of all ages love these tasty cookies. They’re fun to make and perfect for a healthy holiday treat.

Ingredients

3 1/2 cups rolled oats
8 medjool dates, pitted and chopped
1 1/3 cups unsweetened soy, hemp or almond milk
1 1/2 cups raw almond butter
3/4 cup unsweetened, shredded coconut, divided
1 cup 100% all-fruit preserves, optional

Instructions:

Grind oats slightly in a high-powered blender. Pour into a bowl and mix with dates, non-dairy milk, almond butter, and 1/2 cup of the coconut.

Form into balls and roll in remaining coconut.

If desired, press down in middle with thumb and place a small amount of fruit preserves in the indentation.

Refrigerate before eating. Makes about 40 cookies.

I regularly make these, I love the rawness of the uncooked oats and it's too easy to not have to fire up the oven.  I do find that they don't keep terribly well after about 10 days, hehe, they are certainly still edible.  Although I want to eat 15 at a sitting, I find the nut butter a natural obstacle to no more than 3 at one sitting.  I would advise, the smaller, the better imo.

Doesn’t preserves have sugar?  I guess I’ll look for some sugar free jam.  What is everyone else using?

All-fruit preserves do not have added sugar.

I would think so...raw cashew or any other would most likely be ok..stay as natural and orgainic as possible.

Looks like a misprint in the amount of coconut.  It lists 3/4 c. of coconut, but then says to mix in 1 c. of the cocount with other ingredients.  Which is it-- 3/4 c. or 1 c.  Thanks

Edited recipe: Total amount of coconut is 3/4 cup but 1/2 cup is mixed with the ingredients and the remaining 1/4 cup is used to roll the balls in.

Hey, Debilynn, you can omit the coconut. You can grind more oats (or use oat flour) to roll them in.

This sounds like a good recipe but I am allergic to coconut. What do you suggest as a substitute?

I preferred these baked at 350 degrees for 10 minutes and then added the jam when cool. I don't care for coconut but added 3/4 c anyway, and liked how it turned out. Not overly coconutty. I also blended the dates with the milk (used almond milk) so there wouldn't be chunks in the cookie and that worked well. The cookie isn't super sweet but the jam adds just enough sweetness. Tasty!

My wife just hid them from me. I was eating too many of them she says. They remind me a little of the chocolate peanut butter oatmeal cookies. They are good!

I didn't care for the recipe as it's written. I liked the idea of no-bake, but unbaked they tasted like raw oats (I chose not to use coconut, so maybe they would have been better with the coconut.) I decided they needed to be baked, and that did improve the flavor. Also they weren't sweet enough. I made half the recipe, and 4 dates were not enough to sweeten them. The recipe for Cashew Cookies is much better.

Katy, I'm just seeing this now. I wish there was a way that they could notify members when someone is asking them a question from the recipe section. I can't find the cookie recipe right now, but the current recipe I use for cashew cookies is from a website called The Vegan 8. Look it up. They're fantastic.

Very easy to make and tastes awesome, I blended the coconut flakes with the oats - give them a go!
