For the Salad:
1/2 cup cooked wild salmon, flaked
2 cups green beans, cooked
1 cup cooked and cubed sweet potatoes
1/2 cup chopped bell pepper
1/2 cup shredded carrots
1/4 cup thinly sliced sweet onion
1/2 cucumber, cut into small cubes
1 large tomato, coarsely chopped
2 cups mixed salad greens or baby greens
2 cups romaine lettuce, torn in small pieces
For the Dressing:
1/4 cup water
2 1/2 tablespoons balsamic vinegar
2 tablespoons raw almond butter
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon dried oregano
1/4 teaspoon dried basil


Prepare all salad ingredients. Whisk dressing ingredients and toss with salad mixture and serve.

I really like this salad as a comfort food. I used shallots and then red onion at another time. Very easy for a nice dinner when there is no time to cook!

This recipe's a keeper! Flavorful and delicious, with or without the salmon. A meal in itself, and my SAD husband really liked it, too.

Very good with purple potatoes, if you can find them, or sweet potatoes both in replacement of white potatoes.
