Blueberry Basil Lemonade with Ginger

Ingredients

2 cups fresh or frozen blueberries
1 cup chopped dates
5 cups water, divided
1/2 cup packed fresh basil
2 inch piece fresh ginger, chopped
2 tablespoons freshly grated lemon zest
1/2 cup fresh lemon juice
ice

Instructions:

Place blueberries, dates and 1 cup of the water in a medium saucepan and bring to a simmer. Cook for 2 to 3 minutes or until berries start to burst. Transfer to a high-powered blender, along with the basil, ginger and lemon zest. Blend until very smooth.

Add remaining 4 cups of water and fresh lemon juice to the pitcher. Refrigerate until cool. Serve with ice.
