Ingredients

1/2 cup raw cashews
1/2 cup hemp seeds
1/2 cup water
1/4 cup white wine vinegar
1 clove garlic
1/2 lemon, juiced and zested
1/2 tablespoon Dijon mustard
1/2 teaspoon coconut aminos
1/2 teaspoon black pepper

Instructions:

Blend all ingredients in a high-powered blender.

This dressing is excellent.  There is plenty of flavor in this dressing.  Garlic is minimal to bring out other flavors.

This is a fantastic salad dressing/ dip!  On the 2022 Special Detox we used raw sunflower seeds in lieu of cashews, but everything else was the same.  It's pretty thick, so overnight it thickens enough that extra liquid needs to be added; I juiced he other half lemon and it was perfect!

11/4/23-- this recipe is featured in the fall detox.  I made it according to directions, except used 3/4 cup of water (instead of 1/2 cup) so it wouldn't be so thick.  Great dressing!

This dressing will be in my rotation of dressings.  It is SO wonderful.  When I tell the "lunch bunch" at the office that "I made this and it's healthy", they are curious.  I just tell them I made it in the blender, no salt, no oil.  This is so easy to make too, thanks so much.

I have tried many recipes for Caesar Dressing and this one is the best.  I feel like I am consuming less fat because instead of a cup of cashews, I am adding hemp seeds.  Also, this recipe is very quick and easy to make and I never have a lot of extra time.  This recipe is now my favorite one.

Fantastic dressing!  One of our favorites! Easy to make and uses ingredients I usually have on hand.

Per a suggestion from Chef AJ in her "unprocessed" cookbook, I substituted cannellini beans in place of the cashews.  It reduces the fat and increases the fiber.  I also think all the dressings for which I have used the bean substitution seem to be much smoother and I use a Vitamix!

The 1/2 cup cashews (340 cal, 26g fat, 1g fiber, 18g carb, 10g protein) was replaced with 1/2 cup cannellini beans (100 cal, 0g fat, 5g fiber, 19g carb, 6g protein).  The nutrition stats come from the packaging I have.

Another bonus is that the beans are not as expensive as cashews (even from Trader Jo's!).
