Baked Portobello Mushrooms

Don't forget the mushrooms! This simple side dish is a great addition to any meal.

Ingredients

2 large portobello mushrooms, stems removed
2 teaspoons coconut aminos
2 teaspoons balsamic vinegar
1 clove garlic, chopped
1/2 teaspoon fresh thyme leaves or 1/4 teaspoon dry thyme

Instructions:

Place mushrooms in a baking dish, stem side up. Combine coconut aminos, balsamic vinegar, garlic and thyme in a small bowl. Pour mixture over mushrooms and let sit for 15 minutes.

Preheat oven to 375 degrees F. Bake mushrooms for 15 minutes, flip them over, then bake for an additional 15 minutes or until soft and tender.

Quick, easy, and delicious.  I octupled the garlic because I love garlic.  Too, I agree with Mary--best to marinate overnight.  I also wrap these in foil and grill them in lieu of baking.

I love Portobello mushrooms and I enjoyed this recipe. I will be using it often. I do like to marinate the mushrooms overnight.
