Baba Ganoush


Baba Ganoush comes to us from the Eastern Mediterranean region. Similar to hummus, it's made with eggplant instead of chickpeas. Serve with an assortment of crisp raw veggies!

4 medium eggplants, cut in half lengthwise
3 tablespoons tahini or unhulled sesame seeds
2 tablespoons fresh lemon juice
2 cloves garlic, chopped
1/2 cup water
1 teaspoon cumin
1 teaspoon smoked paprika
1 head roasted garlic (see note)


Preheat oven to 300 degrees F.

Place eggplant in a shallow pan, flesh side down, with 1/2 inch water. Roast for 45 minutes or until tender. Let cool. Remove the skin and place eggplant in a food processor with remaining ingredients. Pulse the ingredients together until mixture is smooth and creamy.

Chill for 2 hours before serving.

Note: To roast garlic, break the cloves apart, leaving the papery skins on. Bake at 350 degrees F for about 25 minutes until garlic is soft. When cool, remove the skins.

I have a question....  3 tablespoons tahini or unhulled sesame seeds.  Does this mean either 3 Tbsp of Tahini or 3 Tbsp unhulled sesame seeds?
