Retreat Chocolate Fig Truffles

These chocolate truffles will provide a festive finish to your holiday meal. They are also great for gift-giving!

Ingredients

1 cup raw cashew butter
3/4 cup pitted medjool dates
2 tablespoons unsweetened cocoa powder plus additional for coating
2 tablespoons ground chia seeds
1 tablespoon fig vinegar such as Dr. Fuhrman's Black Fig Vinegar
1/2 tablespoon pure vanilla bean powder or alcohol-free vanilla extract
2 tablespoons dried cherries, optional

Instructions:

Process cashew butter, dates, cocoa powder, chia seeds, vinegar, vanilla and dried cherries in a food processor until very well blended. Roll into 10 truffles.

If desired, roll truffles in cocoa powder.

Note:
To make "fudge", double the recipe and press into an 8x8-inch parchment paper-lined pan. Freeze, and then cut into squares.

I think they must be referencing the "fig" vinegar.  I noticed that there is no mention of how to store these.  I'm guessing they should be placed in a tin and refrigerated?  Not sure, or perhaps they will keep being left out?

Yes, almond butter or a no-salt, no-oil peanut butter would work in this recipe. They have stronger flavors however, so you might not taste the fig flavor.

Most delicious.  The dried cherries are very much a value-added option.  Also, you are never going to want to use vanilla extract in anything again after using Dr. Fuhrman's pure vanilla bean powder.  Finally, I love adding walnuts to this.
