Pumpkin Pasta Sauce

1 small onion, finely chopped
2 cloves garlic, chopped
1 cup tomato puree
1 cup pumpkin puree
3/4 cup water
1/4 cup unsweetened soy, hemp or almond milk
1 tablespoon date puree (see note)
1 teaspoon coconut aminos
1/4 teaspoon cinnamon
1/8 teaspoon ground black pepper
pinch cayenne pepper, or to taste
5 fresh sage leaves, thinly sliced


In a medium pot, heat 2-3 tablespoons water and water saute onion and garlic until tender. Add tomato puree, pumpkin puree, water, non-dairy milk, date paste, coconut aminos, cinnamon, black pepper, cayenne pepper and sage leaves.

Bring to a boil, reduce heat and cook for 5 minutes, stirring frequently.

Serve over bean pasta.

Note: To make date puree, blend 6 pitted Medjool dates (or 12 regular dates) with 1 cup of water. Store refrigerated in an air tight container. It will keep for up to one week.

Tried this for dinner tonight with Golden Harbor organic Edamame Fetacinni.  It was most delicious.  I added Dr. F nutritional yeast to it and a more than a pinch of crushed red pepper, dried parsley, and dried oregano

It was so quick and easy to make.    It doesn't taste like pumpkin or tomato it just taste like a good sauce.   I added another dash of cayenne pepper.   (You may have to go get some coconut aminos and sage if they are  not in your go to pantry like I had to do).   ??great sauce
