Chia Pumpkin Pudding

Ingredients

3/4 cup pumpkin puree
4 Medjool or 8 regular dates, pitted
1 1/2 cups unsweetened vanilla almond milk
1/4 teaspoon pure vanilla bean powder or alcohol-free vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice
1/3 cup chia seeds

Instructions:

Blend pumpkin, dates, almond milk, vanilla, cinnamon and pumpkin pie spice in a high-powered blender until creamy.

Place in a bowl, stir in chia seeds and refrigerate until thickened, for at least one hour or overnight.

This chia pudding is so delicious and easy to make. It reminds me of pumpkin pie, and everyone loves it, even the kids! I also ate it with some walnuts.

I didn't have pumpkin pie spice in July.  Used cinnamon, ginger, cardamom, nutmeg.
