Nutritarian Carrot Breakfast Bites

These breakfast treats will have you hopping out of bed! They taste so good, you may want to serve them for dessert.

Ingredients

1 tablespoon ground flaxseed
3/4 cup oat flour
1 1/2 cups old fashioned rolled oats
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/8 teaspoon nutmeg or allspice
1 cup shredded carrots
1/4 cup raisins or other unsweetened dried fruit
3 medjool or 6 regular dates, pitted and chopped
1/3 cup fuji (or similar) apple, cored and chopped
1/4 cup RIPE avocado

Instructions:

Preheat oven to 350°F. Line a baking sheet with parchment paper.

Prepare “flax egg” by mixing flax seed with 3 tablespoons warm water. Allow it to sit for at least ten minutes or until it is a gel-like consistency.

In a large bowl, whisk together oat flour and oats, baking soda, cinnamon and nutmeg. Add carrots, raisins and chopped dates to bowl.

Blend the apple and avocado together with the flax egg in a food processor or high-powered blender. Pour mixture over ingredients in bowl, and fold it in until well-combined.

Using a 1 tablespoon scoop, or your hands, gently form 1 1/2-inch balls and place on baking sheet. Don’t squeeze too tightly or the centers will remain gooey. Bake for 20 minutes or until golden brown around the edges.

Cool bites for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Makes 12 Breakfast Bites. Serving size is 2 pieces.

Note: You can make your own oat flour. Pulse old fashioned rolled oats in a food processor until they are ground to a flour-like consistency.

How do you store these?  And how long would it last either on counter or in fridge/freezer? 
(this is basically my question for a lot of recipes on this site. I wish people would include it)

You can keep them at room temperature for 2-3 days and up to 5 days in the refrigerator. You can also freeze them for longer storage.

These are very tasty.  Hard to stop when you get started and with the spices it definitely has the flavor of fall.

These were good with decaf coffee. Nice treat.  You do have to mix the dough well. Use your hands towards the end to encorporate everything.

These were very tasty but a little dry. But I thought they were going to be dry when I tried to shape them. I'm not much of a baker and I didn't know, should I have just added some more water to the mix when it felt dry to me?

I also noticed the dates were not in the directions and so I added them to the dry ingredients. But, the end result after adding wet ingredients was still rather dry. Especially, after it said not to squeexe together or the insides would remain goey. Next time I will add tthe dates to the wet ingredients.

I would soak the dates first, then add to blender with apple, avocado and flax egg.
It should not be a problem baking in a pan, but baking time will not be the same. Probably a bit longer, but it will depend on the thickness of the batter in the pan.

I used an ice cream scoop to portion out servings.

Seem to have forgotten dates in the directions!!!  I assume the dates should be blended with the apple and avocado.  Thank you so much for recipe.  Will try shortly.
