Have you tried kohlrabi? The bulbs are slightly sweet with a mild peppery bite and can be eaten raw or cooked. They make a great cruciferous addition to your salad.

Ingredients:

3 small kohlrabi bulbs (about 1 pound), peeled, cored and cut into 1/4 inch matchsticks
1 small apple, cored and cut into 1/4 inch matchsticks
1 small shallot, thinly sliced
1 carrot, peeled and grated
1/4 cup walnuts, chopped
black pepper, to taste
For the Dressing:
1 orange, juiced (about 1/2 cup juice)
1/4 cup unsweetened soy, hemp or almond milk
1/4 cup raw almonds
1 tablespoon balsamic vinegar

Instructions:

Combine kohlrabi, apple, shallot, carrot and walnuts in a medium bowl.

Blend dressing ingredients in a high-powered blender. Toss salad with desired amount of dressing. Season with black pepper.

I had 2 kohlrabi (10 ounces) to use up so I scaled back the salad part of recipe, making the dressing as written and discarding the surplus.  We enjoyed the flavor but found the matchstick shapes annoying.  Next time I’ll try converting this recipe to a micro salad.

This was surprisingly lovely. A mild salad with a fantistic dressing. I substituted the vinegar for Red Wine Vinegar as i don't like balsamic. Tasted Heavenly and my hasband commented on how great it tasted. Thanks Dr Fuhrman for another fantastic recipe. I had never tasted Kohlrabi before and was plesantly surprised.
