For a special treat, finish your meal with a rich and flavorful Nutritarian gelato.

3/4 cup unsalted shelled pistachios, divided
2 cups water
1/2 cup raw cashews
2/3 cup silken tofu
18 regular dates or 9 Medjool dates, pitted
1 cup frozen mango chunks
1 small or 1/2 large avocado
1 handful raw spinach
1/4 teaspoon almond extract


Coarsely chop ¼ cup of the 3/4 cup raw pistachios and set aside to add later.

Blend the other 1/2 cup of pistachios along with remaining ingredients in a high-powered blender until smooth and creamy. Stir in chopped pistachios.

Freeze in an ice cream maker or just freeze.

Looks like you take out 1/4 cup of the 3/4 cup of shelled pistachios and coursely chop that 1/4 cup, and then set it aside separately.  Take the remainingly 1/2 cup of pistachios and put them in the blender with the rest of the ingredients and blend until smooth and creamy.  Then add the 1/4 cup of coursely chopped pistachios into the creamy mixture to give it some crunch.  Sounds like a winner!  Will have to try it.  Does this help clarify, fitzfirst?

 I followed the recipe exactly and wow! such a refreshing and vibrant pistachio gelato. I like it much better than the SAD original.
