Avocado toast is so simple and so satisfying. It’s a great idea for an on-the-run breakfast or lunch.

2 (100% whole grain) pitas, lightly toasted
1 ripe avocado, mashed
1 medium tomato, sliced
1/2 red onion, sliced thinly
2 tablespoons raw pumpkin seeds, toasted (see note)
black pepper or crushed red pepper flakes, to taste


Spread the mashed avocado on top of the toasted pitas. Add tomato slices and sliced onion and sprinkle with pumpkin seeds. Season with your choice of ground black pepper or red pepper flakes.

Note: Other seeds or chopped nuts may be substituted.

I love this recipe. It is so easy to make, the ingredients can always be around and I can have it made in no time for as many people as I like. Would love lots more like this.

These are great. I substituted the bread for sliced cucumbers and used a cherry tomato to top each one.

Great recipe. Favorite variant: use Alvarado street no-salt-added sprouted grain toast, with chopped red peppers added.
