1 head cauliflower, cut into florets
2 cloves garlic, chopped
2 tablespoons lemon juice
1/4 cup chopped fresh basil, dill or parsley
1/4 cup chopped almonds and/or raisins, optional


Grate cauliflower or pulse in a food processor until it resembles rice.

Add 2 tablespoons of water and "riced" cauliflower to a skillet. Cover and cook for 8 minutes, Add garlic and cook for an additional 2 minutes. Add additional water if needed to prevent sticking.

Remove from heat and stir in lemon juice and herbs. If desired, stir in chopped almonds and/or raisins.

If I use already riced cauliflower, how many cups would I need for this recipe?

Agree, this sounds great. Been daydreaming at work waiting to try this one :) I made a cheesy cauli-rice recently.. Simply replace lemon, almonds and herbs above, with 1/3 cup nutritional yeast, little bit of almond milk, and 1 tsp black pepper. Goodbye mac & cheese :)

This was a delicious recipe. I did make a variation as I felt it needed more flavor for me. I added about 1/2 tsp curry powder when i added the garlic. I also added a little steamed kale and steamed broccoli towards the end. simply because i love lots of vegetables.My husband loved it and asked for seconds, so I am making it again tonight. :)

Note to Carolyn: All the ingredients are flexible. If you have about four cups of cauliflower rice, you'd probably follow it pretty closely, but more or less garlic, raisins, etc. wouldn't make much difference -you could adjust to your taste.

I used balsamic vinegar in the pan while I was cooking it instead of lemon. I didn't have basil so I used cilantro. I added a little Bragg's Liquid Aminos (though low sodium soy sauce would also be good). I thought it was delicious.

It's very versatile. You could saute onions first, and add anything you felt like adding, such as tomatoes and curry.

Yum!  I used cilantro because that's what I had.  Added mushrooms and onions.  Topped with fresh ground pepper and sliced almonds.
