Kale with Dr. Fuhrman's Mushroom Alfredo Sauce

3 cloves garlic, chopped
1 cup chopped onion
10 ounces mushrooms, sliced
10 cups chopped kale
1 (12 ounce jar) Dr. Fuhrman's Mushroom Alfredo Sauce (see note)
8 ounces bean pasta, cooked, if desired


Heat 1/4 cup water in a large non-stick skillet. Add garlic and onion and saute for 2 minutes. Add mushrooms and cook for 5 minutes or mushroom liquid begins to evaporate. Gradually add kale, cover and cook for 4 minutes, stirring occasionally and adding more water as needed to prevent sticking. Add Mushroom Alfredo Sauce and continue to cook until heated through.

Serve on top of bean pasta if desired.

This is great.  I had some over Red Lentil pasta.  Then I tried some over quinoa, and that was so good, because the quinoa absorbed the sauce so nicely.  Then I thought, this would be good even if you had no Mushroom Alfredo sauce at home.  Just make it without it, and enjoy the healthy kale, mushrooms, onion, and garlic in it's simplest form.  (I used curly kale, two bunches of kale worked).
