Here's a fun way to cool off while getting your daily serving of antioxidant-packed berries.

Ingredients:

2 cups frozen blueberries (see note)
3/4 cup unsweetened soy, hemp or almond milk
1 tablespoon ground flax seeds
2 medjool dates or 4 deglet noor dates, pitted
ice cubes

Instructions:

Blend until smooth in a high-powered blender, adding ice cubes as needed to achieve a slushy consistency.

Note: Can also be made with frozen strawberries, cherries or mango.

Eating this while I type. Yummy. A bit difficult in my blender, so I will look into a vita-mix later. I made a third of a recipe (as number of servings not posted). It wasn't enough volume to get my blender to work, so I made 2/3 of a recipe. Added an extra date. Very nice flavor. I suspect the recipe serves 3-4 as written above. Will definitely make again.

Nutritional info very confusing! In email "Recipe of the Day," states, "Calories 237; Protein 10 g; Carbohydrates 25 g; Sugars 9 g; Total Fat 12.9 g; Saturated Fat 1.9 g; Cholesterol 0 mg; Sodium 124 mg; Fiber 10.6 g; Beta-Carotene 3505 ug; Vitamin C 23 mg; Calcium 158 mg; Iron 4.2 mg; Folate 398 ug; Magnesium 151 mg; Potassium 1166 mg; Zinc 3.9 mg; Selenium 8.7 ug" How can that be reconciled with this version?

The nutitiion facts printed with the recipe are correct. The info that went out in the email was a misprint. Sorry for the confusion.
