Pear Mustard Dressing

Ingredients

2-4 dates, pitted
1 cup raw almonds or 1/2 cup raw almond butter
2 tablespoons tahini
1 teaspoon no-salt-added stoneground mustard
1/2 cup water

Instructions:

Combine all ingredients in a high-powered blender and process until smooth

It was a sweet creamy dressing.  I only used 2 medjool dates, and I used Musette Dijon Mustard.  You could not taste the mustard at all.  This type of dressing is not one of my favorites, but it is a very good dressing for a fruity salad,  so really I rate this 5 stars in the sweet creamy type of dressing category...

"Quick & Easy" should be added to the tag, because it is, but so delicious.  I used Westbrae no salt added stoneground mustard: http://www.westbrae.com/products/condiments/smns.php.  This one's a keeper!

Very good - although mine turned out too thick - perhaps because I used whole, skin-on almonds. I also found it to be way too sweet - even with just two dates. So I added more tahini and mustard (plus both liquids: D'Anjou V and coconut water). The flavors came through perfectly with mixed greens. I'm using up the last round of greens from my local organic farmers market: Asian greens, red leaf lettuce and kale. I kept the salad simple by adding red onion ... to let the dressing shine ... and it did, deservedly so. Thank you!
