It’s great to have a bowl of this broccoli salad on hand to pack for lunch or serve as part of a quick dinner. The nut-based dressing provides just the right touch of sweetness and flavor.

Ingredients:

1 head broccoli, florets cut to bite size
1/4 cup raisins, divided
1/4 cup raw sunflower seeds
3/4 cup unsweetened soy, hemp or almond milk
1/2 cup raw cashews or almonds or 1/4 cup raw cashew or almond butter
2 tablespoons fresh lemon juice

Instructions:

Combine broccoli, 2 tablespoons of the raisins and sunflower seeds in a large bowl.

In a high-powered blender, blend remaining 2 tablespoons raisins with non-dairy milk, nuts and lemon juice.

Pour desired amount of dressing over broccoli mixture and toss to combine. Chill.

Note: If desired, a peeled and chopped apple may be added.

Nice refreshing recipe. Besides the apple I'm going to throw in minced clove of garlic . I love garlic and onions and they always give a little zip to certain recipes.

I love this! I made it for one without a blender. I microwaved some frozen broccoli and added some raw chopped onion. Then I added a rounded tablespoon of almond butter, a tablespoon of almond milk and a half-tablespoon of lemon juice. Then came a handful of raisins. I didn't have any pumpkin seeds so I skipped those. It all stirred up very easily and was most delicious!

I used orange instead of lemon juice. I also added the rest of the orange cut up and one apple. I love the dressing and will use it on my other salads or even pre-shredded cabbage for cole slaw

This sounds good. Going to make it this weekend and I bet shredded carrots would be good in this as well!

This is also good with cauliflower added and I use vegenaise for the dressing.

How long does this salad dressing last in the refrigerator? Sure sounds good.

It is 4 servings. So, i eat in 4 days. It could probably go for 7 if you really needed to. It is a nut based dressing, so it should be fine.

This my absolute favorite of all of Dr. Fuhrmans salad recipes! Since starting ETL over a month ago, I have this as a side at every dinner meal! So yummy!

This is delicious!! I"ve used frozen brocolli and steamed it. The sauce was real easy to make in my vita-mix. Took hardly any time at all.
