Broccoli Mushroom Casserole Supreme

Ingredients

3 cups fresh or frozen broccoli florets
8 ounces mushrooms, cleaned and sliced
1 1/2 cups cooked kidney beans or 1 (15 ounce can) low sodium or no-salt-added kidney beans, drained
3 cups cooked farro
1 (17.6 ounce) carton (about 2 cups) Dr. Fuhrman's Supreme Greens G-BOMBS Soup

Instructions:

Preheat oven to 350 degrees F.

Thaw frozen broccoli or if using fresh, steam for 10 minutes or until crisp tender.
Sauté mushrooms until tender and most of the liquid is cooked off.

Combine all ingredients in a baking dish.

Bake for 20 minutes or until heated through.

I was SO excited to make this because it had many of my favorites - brown rice, mushrooms, broccoli, and kidney beans. Unfortunately, I felt like I wasted those ingredients and that I would have enjoyed them much more had I just eaten them individually rather than combined with the soup. Very disappointing ... but I guess you win some and lose some in this new adventure of healthy eating!

Quick and easy, I was happy to try this out for dinner the other night on one of those days where it's dinner time and nothing was ready! I discovered too late that I didn't have any soup anywhere, but I had a delicious locally made spaghetti sauce, so I made it with that. Funny, but I had leftover rice, leftover white beans, no broccoli, but I did have cauliflower. So the recipe was delicious, and worked well as an inspiration for what to put together to clean out the refrigerator of leftovers! Thanks for sharing it.

At first I thought the flavors were strange. But after making it a few times, it has grown on me. I added guacamole to it to add some sourness because it tasted a bit bland.

With this I agree.  It took several attempts to accept the Supreme Greens flavor but over time it's grown on me as well.  I really, really enjoyed this dish exactly as stated, no changes, and this makes an interesting breakfast the next morning as well as there's about three total servings for a single eater here if this is the only thing eaten for the meal.

I totally agree, the first time with the Supreme soup was absolutely shocking, it wasn't at all what I might have expected -- among the strangest flavor combinations ever...but after making this three times and working my way through it, it's absolutely grown on me.  This is the one packaged soup that you'll not find anywhere, anywhere else, it's that unique.

If you don't have Supreme Greens, try one of Dr. Fuhrman's other casserole recipes: Creamy Kale and Mushroom Casserole, Super Three Green Casserole or Baked Kale and Cabbage Casserole.

I wasn't looking forward to making/eating this, but to my surprise, it was really good! I used pasta sauce (no salt or oil) instead of the soup. Even my kids (7 & 7) liked it!

To replace Supreme Greens one could just add in the elements that make up the G-BOMB soup.

For instance-

1) Blend some tomatos (1-2),   some cashews to thicken sauce , a little water, some seasonings (onion and garlic powder, black pepper), and a carrot or date or two for sweetness. Mix in a large handful chopped kale.

Taste and adjust and then pour just enough of this blended cashew sauce over casserole - not too liquid.

2) Or just do as others did above and use a quality store bought pasta sauce, but probably should still want to add in with the pasta sauce some chopped greens (kale) and blended cashews for a denser G-bomb type nutrition.

It wouldn't take long to do either above and still keep this as a quick recipe.

Made in an instant pot. Used two vegetarian bouillon cubes, granulated garlic, Italian seasoning blend a sprinkle of crushed red pepper, and 2 chopped tomatoes instead of the G-BOMBS Soup. Also added 2 large handfuls of chopped kale. Added some homemade hot sauce. It is very good!

I am new at this...in a fry pan, I steamed fresh white mushrooms and bag of frozen cauliflower/broccoli in Walmart veggie broth. In a pot, I cooked quinoa (for the first time) using more veggie broth rather than water, and added some "wok" seasoning (all I had). Added a can of Walmart kidney beans to fry pan. Turned off both burners, let sit for 15 min. then mixed together and ate. No oven bake. really easy. Very good. Thanks, Dr. Fuhrman for the ingredients and exuse the cooking procedure! Next time, Garden Girl's mix: powdered bouillion, garlic (cut before cooked as Dr.F recommends) Italian seasoning blend, sprinkle of red pepper and chopped tomatoes. I have my first bag of kale in refrig, but ....don't think I will like it....will add it anyway.

i loved this recipe, made it exactly as stated and added a tiny bit of coconut aminos when done. one of my favorite recipes!
