Mango Macadamia Nut Ice Cream

Ingredients

1/2 cup unsweetened almond, hemp or soy milk plus more if needed to achieve desired consistency
1 ripe banana
2 cups frozen mango
1/4 cup raw macadamia nuts or walnuts

Instructions:

Blend ingredients in a high-powered blender. Freeze until firm.

The taste was fine, but it was a popsicle - definitely not ice cream.  Next time I will make it in popsicle molds - if I make it again.  It's not a cheap ice cream, so not sure I'd actually make popsicles either...Sorry.  I see many have rated it much higher than I did.

Needed a sweet fix after a hot day, made exactly as the recipe said except the banana was frozen too, and I think I could live on this, love, love, love it!

My kids are always on board to do ETL when this is in the Vitamix! Put the nuts in the bottom first, makes it easier to get those smooth, we usually double it and it leaves chunks of mangos and macadamia nuts. Delicious. Every single time.

This is fabulous and so easy! I add a sprinkle of cinnamon or pumpkin pie spice. Used fresh mango, lightly frozen, and froze the banana too. I like it best fresh from the blender. Really creamy and filling.

I love this recipe. I used to make it as written but now I skip the plant milk, use about equal parts frozen banana and frozen mango, an ounce of macadamia nuts and 1/2-1 cup water for blending. This is also wonderful with 1/4 teaspoon vanilla bean powder. I eat this as my last food of the day before starting my intermittent fasting overnight. It’s so satisfying and delicious that it signals my body not to eat for the rest of the evening.

Any suggestion to replace the banana? I'm very allergic(can't breath) So many ice creams use frozen banana.

Tofu works to make a pudding like avocado does so maybe try a small recipe - but I dont know how tofu freezes.

You could try substituting avocado for the creaminess a banana would have provided and perhaps add a medjool date or two for the sweetness that would be lacking otherwise.  Or, a second option might be to substitute papaya for the banana, but I think it might change the taste a lot.

Outstanding. I used a frozen banana with the frozen mango to give it a creamier consistency. The macadamia nuts make this savory and more interesting than the standard fruit smoothie.

If you wanted to use more fresh mango, you could use a frozen banana.

I used frozen mango un thawed and added 1/2 fresh mango. Might try some coconut and a splash of lime next time.
