Wouldn't it be nice if dinner was waiting for you when you got home? It can be with this easy Slow Cooker Stuffed Cabbage Recipe. It's a complete one-pot dinner that tastes wonderful and makes your life a little easier.

Ingredients:

1 large head cabbage
1 1/2 cups cooked red kidney beans or 1 (15 ounce) can no-salt-added or low sodium kidney beans, drained
1 cup cooked brown rice or cooked bulgur wheat
1 cup finely chopped mushrooms
1 medium onion, chopped
1/2 cup chopped carrots
1/2 cup chopped celery
1 clove garlic, minced
3 1/2 cups low sodium or no-salt-added marinara sauce
1 tablespoon lemon juice
1/3 cup currants

Instructions:

Remove 8 large outer leaves from cabbage. Cook in boiling water for 4 to 5 minutes or until just limp. Drain. Trim the thick rib from the center of each leaf and set aside. Shred the remaining cabbage and place in a
3 1/2 to 6 quart slow cooker.

In a medium bowl, combine beans, rice, mushrooms, onion, carrots, celery, garlic,1/2 cup of the marinara sauce and lemon juice. Evenly divide the mixture among the 8 cabbage leaves, using about 1/3 cup per leaf. Fold sides of leaf over filling and roll up.

Combine remaining marinara sauce and currants. Pour about half of the sauce mixture over the shredded cabbage in the cooker. Stir to mix. Place cabbage rolls on top of the shredded cabbage, flap side down. Top with remaining sauce.

Cover and cook on low heat setting for 7 to 9 hours or on high setting for 3 1/2 to 4 1/2 hours. Carefully remove the cooked cabbage rolls and serve with the shredded cabbage.

If one wishes to make this recipe and does not have a crock pot, how long should one cook in the oven and at what temperature?

I think I will try this but without rolling the cabbage up, but using the leaves like strata/lasagna...

Georges, I'd suggest a mid-lower temp like 300 or 325F, let it go for 2 hrs and if still not done, check after another 30 min. I love cabbage rolls, so maybe I'll give it a try and report back..

I made this today in the crock pot and it's wonderful! I substituted raisins for currents since that's what I had home, and otherwise followed the recipe. Next time I would add a little more of everything, maybe include other kinds of veggies, and use a bigger head of cabbage to ensure lots of leftovers...

Wow! This was awesome. Other than adding a 1/2 cup of water in the bottom of the crock pot and adding some cumin and black pepper. I followed exactly. Really good.

Most of the marina sauce contain salt or oil, may I use tomato sauce and seasoned it with
herbs. Also can I sprinkle it with nutritional yeast? Is nutritional yeast contains salt??
Please advise. Thank you.

Delicious, it will be one of our standby recipes. The second tome me made it we just layered everything in the crock pot. They were just as delicious, and a lot quicker to prepare.

This was really tasty. Had quite a bit of flavor. I rolled the cabbage but I also think it would be tasty with everything shredded and mixed together. "unrolled cabbage rolls" My non-ETL family topped with cheese to eat. I didn't think it needed additional flavor.

These were pretty good! I went with Fra Diavolo sauce because I didn't have Marina on hand. I really liked it that way, but I usually approach recipes exactly as listed, first. Oh well! All is good. I also made the Mushroom Stuffed Cabbage Rolls - they were really good too! Thank you!

I have it in my crockpot right now.  I layered slices of cabbage with the sauce and filling cause it was easier. I added 3 extra garlic cloves, some Costco salt free seasoning, hungarian paprika, and lots of fresh ground pepper. Looks delicious.
