Quadruple Seed Peanut Butter Coconut Truffles

Ingredients

1/2 cup unsweetened shredded coconut
1 cup water
12 medjool dates, pitted
1/2 cup smooth natural, unsalted peanut butter
1/2 cup natural, unsweetened cocoa powder
1/2 cup chia seeds
1/2 vanilla bean, split lengthwise
1/2 cup unhulled sesame seeds
1/2 cup hemp seeds
1/2 cup raw sunflower seeds
1 cup chopped unsweetened dried cherries
1 tablespoon fresh orange zest (use an organic orange)
1/4 cup coconut flour
additional coconut flour or ground nuts

Instructions:

In a blender, combine the coconut, water, dates, peanut butter, cocoa powder and chia seeds. Blend until smooth and set aside.

Scrape seeds from vanilla bean pod with a dull knife. In a large bowl, combine vanilla seeds, sesame seeds, hemp seeds, sunflower seeds, dried cherries, orange zest and coconut flour. Stir in the blended date mixture.

Using your hands, form a big ball and then create smaller truffle-sized balls by rolling about 1 tablespoon of the dough in the palm of your hands.

If desired, roll balls in coconut flour and/or ground nuts. Makes approximately 30 bite-sized truffles.

I made these last night, and thought they were delicious. I didn't have all the ingredients, so I just substituted: that is the key to those of you who are complaining...just use what you have! Anyway, I used a bit of date syrup, but would combine with chopped dates next time. I used both vanilla and orange extract, but would add orange zest next time. For the nuts, I got out a measuring cup and used what I had: a bit of sesame seeds, some cashews, some almond meal, until they added up to the right amount and consistency when mixed in. For the dried fruit, I would love to try cherries, but didn't have, so I substituted raisins and unsulphured apricots, which were quite good. BTW, if you don't have coconut flour, just use what you have! I did use it, but didn't roll them in it: I used coconut for the outer. I also had the old recipe, which called for 1 C. of unsweetened non-dairy chocolate milk beverage, and that is what I used instead of the water called for here. Though, you could use juice instead of water if you wanted them a bit sweeter.
Anyway, I will make a few adjustments next time, but these were delightful, and a rare treat in our family!

made these today and were a success!even my two year old loved them!ididnt have hemp seeds so I didn't use that, and I put all the seeds with s afew walnuts in the food processor before mixing...wasn't sure the sunflower seeds whole would be good in them.....lovedddddddd the cocnut flour as coat. yummy, rich, filling....I give it a four stars!

I was SO disappointed! I feel like I wasted my dates. These taste like dirt. I don't know how peanut butter, cocoa and dates could taste so bad. It must be the raw sunflower seeds. They are surprisingly not sweet at all, even with all the dates. Wish I had only made half a recipe so I didn't waste so much.

I made a double recipe last evening for everyone in the office for Valentine's Day. All 60 balls were gone before noon today...they did not make it to Valentine's Day. Everyone loved the treat. I will definitely make it again. Thank you Talia

I wish there were recipes that use regular ingedients that one can find in a regular grocery store, not a specialty store. i havent received one yet in my email that has less than 10 ingedients or doesn't have at least one ingedient that I have to find a store that carries it.
