2 large sweet potatoes
3 large mushrooms, finely chopped
3 cups baby kale, spinach and/or chard
3 scallions, finely chopped
1/8 cup fresh parsley
1 large egg
1/8 teaspoon pepper or to taste


Microwave or boil (after peeling) the sweet potatoes. If microwaved, separate cooked potato from skin and scoop into a bowl. If boiled, mash cooked potato until relatively smooth.

Add mushrooms, kale, scallions and parsley in bowl with sweet potato. Mix well. In a small bowl beat the egg and combine with other ingredients. Form into patties.

Place on a lightly oiled sheet pan and bake at 350 degrees F until lightly browned, about 8 minutes per side.

Doesn't have a baking temperature. That will certainly make a difference in cooking time.

This recipe needs some help. Baking temperature is pretty important for a recipe, and "patties" are pretty subjective. How thick of patties (when I think pancakes, I don't think of patties). Can someone please add this basic information please?

I made these for a party and they were the most loved dish.  I did find my mixture was too watery so I added oat flour to stiffen up the batch.  Very good.
