Strawberry Balsamic Salad Dressing

Nice served over an arugula and spinach salad with sliced red onion, raw pecans, chopped cucumber, chopped avocado and sliced strawberries.

Ingredients

1 1/3 cups sliced strawberries
1/2 cup balsamic vinegar
1 whole shallot, chopped (or 1 clove garlic + 1/4 onion, chopped)
4 teaspoons fresh thyme (or 1 1/3 tsp. dried thyme)
2 1/2 teaspoons Dijon mustard
1/2 teaspoon ground black pepper
1/2 cup water

Instructions:

Combine all ingredients in high powered blender and blend until very smooth.

I was searching Dr Fuhrman’s Quick and Easy Cookbook for a salad dressing to take to a local restaurant and selected this one.  I wasn’t sure how strawberries would taste in a salad dressing, but this recipe is great!
