Whip up a quick sauce and you can make a meal out of a plate of your favorite veggies.

1 (13.5 ounce) can unsweetened coconut milk
1 tablespoon mild yellow curry powder
1 tablespoon spicy no-salt Mrs. Dash or other no-salt seasoning blend
2 Medjool or 4 regular dates, pitted
1/4 cup raw cashews


Blend all ingredients in a high-powered blender until smooth and creamy. Heat in a small saucepan over medium heat.

Pour over water-sauteed or steamed vegetables.

So good! I steamed some veggies for about 20 mins, made some rice in rice cooker, and the sauce was the easiest part! My husband and I both loved it. I don't like too spicy so I used regular Mrs. dash type of stuff. It was perfect!
