This freshly blended pesto will transform your veggies or bean pasta into a gourmet meal. It’s made with basil, spinach, pine nuts, almonds and a healthy touch of garlic.

Ingredients:

2/3 cup raw almonds, lightly toasted
2/3 cup pine nuts (use Mediterranean stone pine nuts if possible), lightly toasted
1 cup fresh basil leaves, packed
1 cup fresh spinach leaves, packed
3 garlic cloves
2 tablespoons lemon juice
1 cup chopped tomato

Instructions:

In a blender or food processor, pulse to finely grind almonds and pine nuts (do not puree). Remove and place in a mixing bowl. Blend remaining ingredients in blender or food processor. Combine with nut mixture. Add 1-2 tablespoons of water if needed to adjust consistency.

Use to top steamed or sauteed vegetables or try it with your favorite bean pasta.

This is THE tastiest pesto this girl has *ever* had, and she has had a lot of pesto in her day, all with dairy.

And, it was very easy to make.

Marilynn, I don't know what bean pasta is, but we used Tinkyada pasta.

Three varieties of bean pasta are available on the drfuhrman.com web site. They are made from black beans or red lentils.

This pesto is great. I couldn't convince my nonETL partner or my kids to enjoy it on whole wheat spaghetti, though I liked it. I froze the rest in an ice cube tray and now I add a cube to a pan full of whatever veggies I have and a can of tomatoes and I have a quick delicious meal. NonETL partner likes it that way!

This is a fabulous Pesto. we use it on our veggie pizzas, and inside pitas, with some of dr. F's better burger recipes. I love the idea of freezing some in ice cube trays Ima get on that!

This pesto was nutritious as well as delicious. I was a little concerned with the spinach but couldn't tell it was in the mix. I placed the pesto over tomato slices with a little balsamic vinegar on the side. It was great!

This pesto is delicious! I had it over 100% whole wheat pasta and both my husband and I loved it. I couldn't believe it had no oil or cheese in it!

This is so good its insane. For the rest of the meal I made something super scumptious to mix with the pesto: water sauté 2 cups mushrooms, 2 cups broccoli, 1 cup onion, 2 cups fiddleheads or any other green vegetables you have. Do the onions first so they became translucent. During the last ten minutes of sautéing add a splash of white cooking wine. Boil a box of green lentil pasta. Combine the pesto, veggies and pasta. Sprinkle with dairy free parm cheese. I call it "green goddess". <3

I love traditional pesto.  While this wasn't the same (or as good), it was tasty and much healthier.  My wife and I had ours over Trader Joe's black bean pasta cold and liked it.  Do most people eat it hot or cold?

When it says in the directions combine with nut mixture, are you supposed to mix everything back in the food proccesor..or hand mix in a bowl? Or are you supposed to keep the nut mixture from being pureed?

You don’t want to puree the nuts, so add the veg to the bowl and mix with a spoon.
