Black and White Beans and Greens

Black and white dry beans are slow-simmered with kale, spinach and onions until tender and flavorful.

Ingredients
1/2 cup dry black beans
1/2 cup dry white beans
1 bay leaf
2 cloves garlic, chopped
1/2 teaspoon Mrs. Dash seasoning
1 tablespoon Dr. Fuhrman's VegiZest (or other no salt seasoning blend, adjusted to taste)
3 medium white onions, chopped
10 ounces spinach, chopped or sliced in strips (or one box frozen)
4 small zucchini
1 bunch kale, stems removed, chopped or sliced in strips
small bunch fresh dill, chopped
Instructions
Bring beans, bay leaf, garlic, seasonings and 3 cups of water to a simmer. Add onions, spinach, zucchini, kale and dill on top of the cooking beans and let simmer over a low flame for 2 hours or until beans are tender. Stir mixture well, breaking up the zucchini and onion.
