Madison Tofu Scramble

This tofu scramble features mushrooms, red bell peppers, spinach, celery and tomatoes, seasoned with cumin and turmeric.

Ingredients

3 whole scallions, diced
1/2 cup finely chopped red bell pepper
1 medium tomato, chopped
2 cloves garlic, minced or pressed
2 small stalks celery, diced
1 1/2 cups mushrooms, small slices or diced
14 ounces firm tofu, drained and crumbled
1/2 teaspoon Mrs. Dash no salt seasoning
1 tablespoon nutritional yeast
1 teaspoon cumin
1/2 teaspoon turmeric
5 ounces baby spinach, coarsely chopped
1 teaspoon coconut aminos

Instructions:

In a large skillet, over medium/high heat, sauté scallions, red pepper, tomato, garlic and celery in 1/4 cup water for 5 minutes.

Add remaining ingredients and cook for another 5 to 8 minutes.

I love this recipe! I'm eating more tofu than I used to, so I enjoy it now. The flavors really came together for me. I am over things like this trying to imitate eggs, and cheez sauce trying to imitate cheese sauce. I now enjoy them for what they are. I will make this when I want something more substantial and warm. You can add as many veggies as you like depending on how hungry you are. I even added cooked black lentils to mine this morning.

This contains mushrooms, so shouldn't the "M" in GBOMBS be checked off? The mushrooms improve the nutritional value, flavor and texture compared to similar recipes elsewhere.

This was delicious! I did make the following modifications: 1/2 red onion for scallions, I had no tomatoes so diced a whole red pepper, I pressed the tofu first, I substituted chopped kale for spinach, using 3 big handfuls,  I sauted all the veggies together first, then I mashed the tofu and added the spices to the tofu before mixing into the veggies, and I added 1/2 tsp each of curry  powder, onion powder, and garlic powder to the tofu. At the table my husband and I added more nutritional yeast, turmeric, and black pepper to taste.

Very colorful and satisfying!

I love this. I love the ammount of veggies in it, the spicing is great. It's better than the scramble I had been making. YUM!!

This is absolutely the best scramble on this site. If you find it gets too dry, keep a lid on to retain moisture (or use more tomato) I use "heaping" amounts of all the seasonings. I am on the higher caloric needs, so I top this off with some avocado and raw sunflower seeds. Absolutely divine. Another idea I saw a poster make on a soup recipe was to purée/blend leftover soup (such as the Austrian cauliflower creamy soup recipe) to make a cheesy sauce to pour over tofu scrambles and I think that is a fabulous idea!

We enjoyed this fast and tasty breakfast! It's a good substitute for the oily tofu scrambles we used to eat. Just make sure to add enough seasonings to give the tofu some good flavor.

It was good, but tended to be very dry.  My wife turned her portion into a soup to get it satisfactory for her.

Followed recipe exactly but I added tamari to my portion at the table.

This is very good, especially with all the vegetables. Tofu is not the easiest thing to prepare - it takes skill. I get that it absorbs flavors, but  another factor is texture. Mine turned out ok. This is a good startt. I'll make this again.

A favorite breakfast for me. I always toss in a peeled chopped parsnip --so sweet -and double the amount of red pepper and garlic.

I will say right away that I am not a tofu fan. Made this for the first time. Had to choke it down. I know people love tofu scrambles. Any ideas about how/why I don't like it? It tasted like cardboard.

blahhhh ... and I really enjoy a good tofu scramble ... trying to figure out how I can fix this up ... maybe I can make a soup from these good ingredients ... I don't know ... will probably just suffer through it and eat it lest it be wastefully thrown out ... :(
