Black Bean Salad in Avocado Baskets

Avocado halves make creative and tasty serving bowls for this lively black bean salad. The creamy texture of the avocado complements the salad and the healthful fat maximizes nutrient absorption.

Ingredients

1 1/2 cups cooked or 1 (15 ounce) can no-salt-added or low sodium black beans, drained
3 plum tomatoes, diced
3/4 cup frozen corn, thawed
1/4 cup diced red bell pepper
1/4 cup diced red onion
1/4 cup diced pineapple
2 tablespoons chopped cilantro plus extra for garnish
1/2 jalapeno pepper, diced and seeded
2 tablespoons red wine vinegar
1/2 lime, juiced
1/4 teaspoon ground cumin
2 avocados

Instructions:

Mix all ingredients except avocados and refrigerate for 1 hour.

Cut the avocados in half and remove the pits. Scoop out about 2 tablespoons of avocado from each half and mix into salad. Fill the avocado baskets with the salad. Garnish with chopped cilantro.

This was good but not outstanding. Thought it could have used a little more seasoning. I had made the Ancient Grain Salad a few weeks before-  it was similar and I preferred it. For this one, I chopped up the avocado and served it all over a bed of lettuce. Would also make a good wrap.

This was delightful.  My husband loved it even though I made some alterations for lack of jalapeno peppers.  I used green chilies instead and it was still very good.

So delicious! I put avocado in a bowl then topped with the black bean salad. My husband suggested that we use leftovers for another meals with wraps.

Good, but they would be easier to eat by removing the outer skin of the avocado first.  I might even cube it and just make it as a salsa or salad.

Saved time by tamping down the tomatoes, onion, and pineapple in a blender for a few seconds--doesn't look as pretty as diced foods, but it's faster and the flavors mingle better.

Highly recommended recipe.

I tried this one the other day and it was WONDERFUL!!! It had such great flavor. I made it about 3 hours before lunch and we ate it all. I don't think that it can really serve 6 unless you use just a little of the salsa, but we really enjoyed it.
