2 leeks, cleaned and thinly sliced
3 carrots, sliced 1/4 inch thick
1 cup chopped red bell pepper
2 cups cubed parsnips
3 cups cooked cannellini beans or 2 (15 ounce) cans no salt added or low sodium, drained
1 1/2 cups diced tomatoes

1 (9 ounce) package frozen artichoke hearts, thawed
1 teaspoon dried basil
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
3 cups chopped Swiss Chard

My family likes this. My nine year old son actually requested this--two times in one month!
