Harvest Cranberry Relish

Cranberry sauce is typically very high in sugar. Here is a better option: fresh cranberries, flavored with orange and apple and sweetened with dates.

Ingredients

1 cup orange juice, enough to cover cranberries
1 pound (about 3 cups) fresh cranberries
1 apple, if organic no need to peel, cored and cubed
4-5 Medjool or 8-10 regular dates, depending on tartness of cranberries
1/2 ounce (about 1/8 cup) raw walnuts
1/2 teaspoon ground cinnamon

Instructions:

Place cranberries, apple, dates and orange juice (enough to cover cranberries) in a saucepan and bring to a low boil. Cook for 15 minutes, adding more water if necessary to avoid scorching.

In a high-powered blender, blend cooked cranberry mixture, walnuts and cinnamon until smooth.

Refrigerate overnight.

Yum!!

I needed a healthy cranberry recipe to share with family and I definitely wanted to go with date sweetened.

When I first finished cooking this I wasn't quite sure about it - maybe I should have left the apple out, maybe I shouldn't have put it in the Vitamix......BUT after letting it cool and set overnight in the fridge it was delicious. Not only did I love it but so did all the SAD eaters at the table. I love it enough that I plan to keep on making it - even for non-holiday use. Highly recommend this.
