Sweet Potatoes with Apples and Cranberries

Looking for a simple yet festive dish to round out the holiday menu? You can’t go wrong with sweet potatoes baked with Granny Smith apples and whole fresh cranberries.

Ingredients

4 large sweet potatoes, peeled and cut into 1 inch chunks
2 medium Granny Smith apples, peeled and diced
3/4 cup cranberries, fresh or frozen
1/2 cup raisins
1/2 cup freshly squeezed orange juice

Instructions:

Preheat oven to 350 degrees F.

Place sweet potatoes in a large baking dish. Top with diced apples, cranberries, and raisins. Pour orange juice over all. Cover tightly with lid or foil.

Bake for 1 1/4 hours or until sweet potatoes are tender when pierced with a fork.

Love this recipe!!! I made it per the recipe, except I forgot to peel the granny smith apples.  It was just fine with the peels.  I checked it at one hour and felt it was overcooked.  Next time, I will check it at 45 minutes and add some more fresh cranberries!!!

I liked this as a holiday dish and added 1 can white beans rinsed.  Dinner is served!  This was delicious and festive.

Way back  in 2008 when members could post recipes, I suggested this one and am happy to see it is still in the rotation! I will be making it again this year for Thaksgiving. I now use sweeter organic apples, too, but otherwise we follow the recipe. I do like Robin's idea of pureeing a couple of dates with the orange juice so plan to try that this year.

This recipe is easy and really good.  I omitted the cranberries and used Gala apples. I meant to give it 5 stars, but hit the fourth by mistake!

I made this a few weeks ago, cutting the recipe in half for just my husband and myself. We both liked it a lot. I love that it is not real sweet. I will be making this again, for sure.

Made a test batch today. Used apple cider, and added walnuts and cinnamon. Turned out great. Had to add some honey for DH's portion. This will be on our Thanksgiving Day table

Very good. I used organic honey crisp apples, so I didn't have to peel them. I added cinnamon and pecans, which bumped it up a notch. I needed to add more OJ towards the end, since it wasn't done after the specified time, but with more OJ, it worked.

Very Good! I followed the recipe and with my modifications, I give it five stars. I blended the orange juice with two medjool dates, which made it a little sweeter. I added some cinnamon and a dash of nutmeg, and poured it over the top and it turned out great! I will make it again soon!

This recipe is so similar to one I've been making for years at Thanksgiving. My variation is a little sweeter. I peel then cube my yams or sweet potatoes into 1" chunks, then just barely cover with water in a pot and boil until done. Only 15 to 20 min. Layer a 9x13 deep baking dish with sliced apples, then drained cooked yams, then top with apples again. Sprinkle with 3/4 cup fresh cranberries and 1/2 cup raw pecans. In a high powered blender I add 1 cup warm water from cooking the yams, the juice from 2 oranges (about 1 to 1 1/2 cups), 6 - 8 medjool dates pitted, 1 tsp ground cinnamon and arrowroot powder or corn starch to thicken. Blend until smooth and pour over the yams and apples. Bake, covered, in 350 degree oven for 45 min to 1 hour. Yum!

This recipe proves again that simple can be better. Made this for the second time and got the same great results. Even though it takes over an hour to bake, it's so easy to prepare. A winner in every way.

Agree with the previous posts. This was amazing. Don't need dessert after this-so easy to make and sooo delicious. Had lentil loaf, mushroom gravy, a big green salad, cranberry and a mock pumpkin pie. This was my fave of all the dishes! I will make year round!

Very nice fall-harvest meal. I quartered the recipe (used half a sweet potato & added a small pepper squash) squeezing fresh oranges instead of the juice, leaving the peel to cook. After reading the comments, I opted to add a bit of water to soften the sweetness of the citrus fruit.It was my main dish, along with my ENORMOUS green salad, and found it well to my taste.

This was incredibly delicious. Ours did taste sweet---possibly because we used Pink Lady apples rather than Granny Smith, and toward the end of cooking time sprinkled about a teaspoon of a really good cinnamon over the top. The orange juice and raisins make it sweet, too, and perhaps we had particularly sweet potatoes. We'd call it a delicious dessert.

I enjoyed this and agree it wasn't super sweet but that was nice actually. If you want more sweetness you can add more raisins. I added a bit of pumpkin pie spice too. :) I really liked the cranberries and I thought I wouldn't. I thought they would be tart and yucky but they were tart and great!

This is not a "sweet" dish but is very tasty. I especially like the tart surprise that the cranberries give it. I use POM juice in place of orange juice because that's what I had and it was fine. I also sprinkled a few chopped walnuts on top just because I felt like it. LOL
