1/2 cup carrot juice
1 navel orange, peeled
1 lemon, juiced
1/4 cup raw cashews or 1/8 cup raw cashew butter
1 inch piece of ginger, peeled
1/4 teaspoon garlic chili sauce (optional)


Blend ingredients in a high-powered blender until smooth and creamy.

This is quick and very good! I used carrot juice from Costco and orange juice from concentrate and it was wonderful! I will make it again!!

Oh, my goodness, this dressing is delicious! I made it exactly as described and then because I was using it to dress a kale salad, and the kale was rather bitter, I added 2 dates. My husband, the dressing hater, asked me to make an extra batch to keep in the fridge for him. This recipe is a definite keeper

I wonder if I can make this with chopeed carrots instead of the juice. I have a juicer but it's a pain to get out and use. Maybe I'll try and let you all know.

 What is garlic chili sauce?   

To the folks who commented here and loved the recipe; Did you use the optional garlic chili sauce? And what is garlic chili sauce?

I googled 'garlic chili sauce" and found it is a spicey oriental sauce. I found it at my local grocer--it does contain preservatives, though. I also ran accross several recipes on the internet, if you would like to make your own and avoid the preservatives used in the pre-packaged variety.  I just made the dressing using the store bought garlic chili sauce.  Both the dressing and the garlic chili sauce are very good!  I am wondering how the dressing would taste using tahini instead of cashews.  If I make that, I'll post and let everyone know how it turns out!

I really enjoyed this dressing.  I made it with a very large whole, peeled navel orange and thought it was great.  I didn't have chili garlic sauce so I used a very small amount of Sriracha sauce.
