Combine five ingredients and microwave. Instant berry cobbler!

1 banana
1/4 cup unsweetened soy, hemp or almond milk
1 cup frozen mixed berries
few drops vanilla extract
dash cinnamon


Mash banana with non-dairy milk in a small microwave safe bowl. Stir in berries and vanilla.
Sprinkle with cinnamon.

Microwave for about 1 minute. Serve warm.

Note: This cobbler can be served on top of cooked quinoa. After the quinoa is cooked, stir in 1 chopped Medjool date or 2 chopped regular dates and 1/4 cup soy, hemp or almond milk and top with berry cobbler.

I made this one for my 6 yr. old "picky eater" granddaughter & she loved it. The only thing I would change is the microwave time. I left it in for 2 minutes & it was fine. Any longer it would have been mush.

Sooooo yummy!!! I make this every day now. I double it up and microwave 2 minutes. I also use frozen strawberries, but I will nuke them a little before hand since they are much larger. I'll also add oatmeal to it for breakfast.

This one is a keeper ! Really good. I was surprised, you can have a tasty dessert on this plan ! I will have to have this every day now. Thank you for this so easy resipe.

Good, but you might want to add some oats or other crumbly topping for it to be considered a cobbler.

Try pressing crushed raw granola into a shell as a crust.Let the banana heat to a very soft consistency to melt into the crust.

THIS IS AWESOME!!! So fast and easy. I did however, add a 1/4 cup of oatmeal on top of banana, then the berries, cinnamon & vanilla.
